When I was a child, my mother always served vegetables with our dinner. Personally, I always preferred corn rather than peas or string beans.
What I did not realize, in those formative years, is corn production is not limited to what mom serves as a side dish. Corn is used for more products than you might think and the production of corn is a water abuser.
In fact, in this recent study by Columbia Water Center: Corn producing states in the US are at the highest risk for water shortage.
